True French tarragon contains the aromatic oils that giving it the distinctive, anise-like character.
Uses: Popularly associated with vinegar and fish but used sparingly or on its own since it can overpower other herbs. Medicinally it has been used as a local anesthetic -chew on a leaf and notice the numbness.

Care: A loosely branched that needs good drainage and some shade but hardy if given these.
The majority of herbs are relatively pest and disease free and require little more than a well-drained sunny site, lots of room, and moderately fertile soil to thrive. Slightly acidic to neutral pH. Adding organic matter to the soil regularly will help provide consistent nutrients. Avoid nitrogen-rich fertilizers.
